The choricero pepper is a variety of red pepper that is usually air-dried in strings for better preservation. It has an intense and slightly bitter flavour and is widely used in a wide variety of Spanish recipes, especially in the north of Spain. It is the main ingredient in Biscayan sauce, together with onion, and is also used as a base for bacalao a la vizcaína. It can also be used in fish stews.
