Free Range 50% Iberico Loin by Marcos Salamanca is a premium Spanish cured pork loin crafted from carefully selected lean cuts of 50% Ibérico pork and seasoned with D.O. La Vera paprika, garlic, and salt. Traditionally known as lomo ibérico, this artisan Spanish charcuterie develops an intense aroma, deep red color, firm yet tender texture, and rich, savory flavor through a meticulous three-month curing process.
Marcos Salamanca uses an exclusive curing method that allows each individual piece to be monitored and refined throughout maturation. To determine the ideal aging point, the producer evaluates each loin according to more than 12 quality parameters, helping ensure consistency in aroma, flavor, texture, and curing.
The selected pork loin is marinated with Designation of Origin La Vera paprika, one of Spain’s most renowned pimentón varieties, before being packed in natural casing and slowly cured according to traditional recipes. The result is a distinctive Spanish Ibérico loin with balanced smoky notes, concentrated pork flavor, and the characteristic richness of artisanal cured meats from Spain.
Serve thinly sliced at room temperature as part of a Spanish tapas spread, charcuterie board, or gourmet appetizer. Pair with Manchego cheese, olives, crusty bread, extra virgin olive oil, or Spanish wine. For the best flavor and texture, remove from the packaging approximately 15 minutes before serving.
