Made with sherry vinegar and Pedro Ximénez sweet wine, this glaze pairs the sweetness of PX wine with the acidity of sherry vinegar. Its thick texture makes it easy to drizzle or to draw designs on the plate, so it works as well for finishing a dish as for decorating it.
Serving suggestions
Use a few drops to finish roasted or grilled meats, to dress a salad, or to add a sweet and tangy contrast to pasta and potatoes. It also goes well with fish carpaccio, fresh fruit and ice cream, and it can be used straight from the bottle.
