Instructions
1. Cook the Potatoes and Onion
Heat the olive oil in a frying pan over medium-low heat. Add the sliced potatoes and onions and cook gently, stirring occasionally.
The goal is to soften the potatoes without browning them. This process typically takes about 15–20 minutes.
2. Drain and Season
Once tender, remove the potatoes and onions with a slotted spoon to drain excess oil.
Season lightly with salt.
3. Whisk the Eggs
In a large bowl, whisk the eggs until well beaten. Add a pinch of salt.
4. Combine the Mixture
Add the drained potatoes and onions to the eggs and gently fold together.
Let the mixture rest for 2–3 minutes so the flavors meld.
If desired, mix in small pieces of Palacios chorizo for additional flavor and color.
5. Cook Using the Spanish Omelette Pan
Lightly oil the Spanish Omelette Pan by Vier and heat over medium heat.
Pour the egg and potato mixture into one side of the pan and spread evenly. Close the double pan and cook for 4–5 minutes, until the tortilla begins to set.
Carefully flip the pan and cook the other side for another 4–5 minutes, until the tortilla is fully cooked and golden.
6. Serve and Enjoy
