Caught at dawn, the baby sardines are carefully selected and sorted by size before undergoing Ramón Peña’s meticulous artisanal process. They are brined, cleaned and cut by hand, washed, and gently steamed. Once cooled, the sardines are arranged by hand inside each tin and covered with extra virgin olive oil. The cans are then sealed and sterilized to preserve their delicate flavor, tender texture, and exceptional quality.
