Cooking Base for Seafood Paella by Aneto

Aneto uses only fresh and natural ingredients that you would use at home – fresh produce, poultry, fish, real olive oil and sea salt. Aneto makes their broths simply and according to traditional recipes. Every broth is simmered over low heat for 2-3 hours – there are no shortcuts in producing the flavor of an authentic, handmade broth.

For this paella base, Aneto fries the onions, the tomatoes and the garlic in virgin olive oil over a very low heat. Then, they season it with paprika and a touch of saffron. Aneto adds all the seafood and the rock fish to the sofrito and continue cooking it gently for over 2 hours, slowly adding the Seafood Broth. Make a perfect paella in just a few minutes - no need to add onions, tomatoes or saffron, as they are already included in the broth. Just add rice. Also works wonderfully in recipes that require a rich broth - soups, stews, risotto, and noodle dishes.
