Aneto begins by slowly cooking onion, tomato, and garlic in extra virgin olive oil, then adds paprika and saffron. Seafood and rockfish are incorporated into the sofrito and gently cooked for more than 2 hours, gradually adding seafood broth to build a rich, balanced flavor.
To prepare an easy seafood paella, simply add rice and your preferred seafood. There is no need to prepare a separate sofrito or add onion, tomato, paprika, or saffron because they are already included in the broth. This versatile Spanish cooking base also works well for soups, stews, risotto, fideuà, and seafood noodle dishes.
