Blue Cheese Spread with Walnuts and Sour Apple

This recipe is incredibly simple and really delicious, requiring only four ingredients!

Ingredients:

  • 150g (5 oz) blue cheese. Our Cabrales cheese works perfectly!
  • 175g (6 oz) cream cheese
  • A handful of nuts (approximately 10 or 12)
  • 1/2 Granny Smith apple (take it out of the fridge before starting the recipe)
Instructions:
  1. Prior to preparing the recipe, remove the blue cheese from the fridge to make it easier to work with. Alternatively, you can briefly microwave it on the defrost mode for a few seconds to soften it.
  2. In a bowl, combine the softened blue cheese and cream cheese, then whisk until you achieve a smooth and uniform paste.
  3. On a cutting board, chop the walnuts using a knife. Avoid using a food processor to prevent them from becoming too finely ground. The aim is to have recognizable walnut pieces in the pâté.
  4. Wash the apple thoroughly, and without peeling it, cut it in half. Only use one half of the apple and grate it.
  5. Add the chopped walnuts and grated apple to the cheese mixture. Stir until everything is thoroughly combined. Transfer the mixture to a bowl and cover it with plastic wrap. Store it in the fridge.
  6. When it's time to serve, garnish it and bring it straight to the table!
