INGREDIENTS:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder La Barraca
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup milk
  • 1 large egg
  • 1 tablespoon melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract
  • Nocilla (hazelnut and chocolate spread)
  • Fresh bananas, sliced and pomegranate

INSTRUCTIONS:
1. Prepare the pancake batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth. Slowly pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.

2. Cook the pancakes:
Heat a non-stick pan or griddle over medium heat and lightly grease with butter. Pour about 1/4 cup of batter for each pancake onto the pan.
