Fabada Asturiana

Fabada Asturiana

Here’s a traditional Fabada Asturiana recipe, a classic Spanish dish originating from Asturias. It’s a hearty bean stew typically made with rich Spanish sausages and beans, perfect for warming up any meal.

Ingredients:
Instructions:
1. Prepare the beans:
- If using  White Beans by El Maragato, soak the beans in water overnight to soften them. Drain and rinse them before cooking.

2. Begin the stew:
- Place the soaked beans or cooked beans in a large pot and cover with cold water. Add the whole onion, garlic cloves, bay leaf, and a pinch of saffron (if using) for added flavor.
- Bring to a boil, then reduce the heat to low, letting the beans simmer gently for 45-60 minutes or until tender. (you can skip this step if using cooked beans)

3. Add the meats:
- While the beans are simmering, add the Chorizo and Onion Black  sausage cut in pieces, and pancetta into the pot. These meats will infuse the stew with their rich flavors.
- Let the meats simmer along with the beans for another 30-40 minutes until the sausages are cooked through and the beans have fully absorbed the flavors.

4. Season and flavor:
- Add the smoked paprika and adjust the salt to taste. Remove the whole onion and bay leaf from the pot.
- If you prefer a thicker consistency, you can mash a few beans against the side of the pot to thicken the broth.

5. Rest and serve:
- Let the fabada rest for about 10 minutes before serving to allow the flavors to meld together.
- Serve the fabada hot, with chunks of chorizo, black sausage, and pancetta in each bowl. You can pair this dish with crusty bread to soak up the flavorful broth.

Enjoy!
